Semi Homemade Strawberry Cake Mix Cookies | When it comes to making a large soft cookie I always go for the cake mix. It’s super easy and tasty. This no fail recipe will have you making cookies for every event!
The great pink color these cookies have to offer makes them perfect for a little girls birthday party, Valentine’s Day or a baby shower! To get the large size I use an ice cream scoop or a large cookie scoop. Make sure that whatever type of scoop you use it has a swivel arm that slides the dough out of the cup like the one pictured below. You’ll be able to tell by the trigger handle. Should hold 3 tablespoons of dough.

Semi Homemade Strawberry Cake Mix Cookies
Ingredients
- 1 (15.25 ounce) box strawberry cake mix
- 2 large eggs
- 1/3 cup vegetable oil
- Optional: 3 tablespoons red sprinkles
Instructions
Preheat oven to 375°. Line 2 cookie sheets with parchment paper.
Add cake mix, eggs and oil to a medium bowl; stir to combine. Fold in sprinkles. Use a large cookie or ice cream scoop (3 tablespoons of dough). Place 5 cookies per sheet. Bake 10 to 12 minutes or until the bottom becomes lightly brown. Slid the cookies still on the parchment paper onto wire cooling racks to cool completely.
