Snickerdoodle Cake Mix Quick Bread

A delicious cinnamon swirl breakfast bread that starts with a yellow cake mix!
Ingredients
For the Quick Bread:
- 1 (15.25 ounce) yellow cake mix
- 2 teaspoons ground cinnamon
- ½ cup vegetable oil
- 1 cup sour cream
- 4 large eggs
For the Cinnamon Swirl:
- 1/3 cup granulated sugar
- 2 teaspoons ground cinnamon
For the Cream Cheese Drizzle:
- 2 ounces cream cheese
- 1 cup powdered sugar
- 1 tablespoon water or milk
Instructions
For the Batter:
- Preheat oven to 350°.
- Spray a 9x5 loaf pan with non stick cooking spray.
- Add a strip of parchment paper length wise, spray the paper, add another strip of parchment paper width wise and spray the paper. Set aside. TIP: The strips of parchment paper should sit on the bottom of the pan and not up the sides.
- In a medium mixing bowl add the cake mix, cinnamon, oil, sour cream and eggs.
- Mix until combined.
- Pour half of the batter into the prepared pan, smooth to the edges.
- Sprinkle 3 tablespoons of the cinnamon swirl mixture on top of the batter.
- Carefully add remaining batter on top, spread to the edges and sprinkle on remaining cinnamon swirl mixture.
- With a butter knife swirl the cinnamon sugar mixture, making sure to include the center mixture in the swirl motion.
- Bake 47 minutes or until a wooden toothpick inserted into the center comes out clean.
- Cool in pan on a wire cooling rack 10 minutes.
- Remove from the pan and cool completely on cooling rack.
- In a back and forth motion add the cream cheese drizzle.
For the Cinnamon Swirl:
- In a small bowl, add the sugar and cinnamon.
- Stir to combine.
For the Cream Cheese Drizzle:
- Place cream cheese in a medium microwave safe bowl.
- Heat 30 seconds or until soft.
- To the same bowl, add the powdered sugar and water or milk.
- Stir until combined—drizzle should be loose and fall from the spoon.

FREEZE: Once the bread has completely cooled, tightly wrap in plastic wrap and foil. Label and freeze. DEFROST: Place the bread on the counter to thaw.
