Two options on how to cook this delicious chili! Cook for 4 hours in a slow cooker or 1 hour on the stove top!
One of the easiest ways of entertaining is by creating some kind of a food bar. There are all kinds like a baked potato bar, soup bar, salad bar, taco bar and even an ice cream sundae bar. Let’s add another bar to the list! A Chili Bar! With toppings like cheese, avocado, onions, cilantro and fresh tomatoes. Also provide bread choices! Bread bowls, crackers, corn bread or Frito boats! Sounds like a party in a bowl!
Spicy Tex-Mex Chili
Ingredients
- 2 pounds ground beef
- 1 large onion, chopped
- 3 garlic cloves, chopped
- 2 jalapeno peppers, seeded and chopped
- 1/4 cup cilantro, chopped
- 1 bell pepper, chopped
- 1 (12 Ounce) beer
- 2 (14.5 ounce) cans diced tomatoes with green chilies
- 2 (16 ounce) cans kidney beans
- 2 (16 ounce) cans pinto beans
- 1 (11 ounce) can corn with red and green peppers
- 1 tablespoon plus 1 teaspoon salt
- 1 teaspoon black pepper
- 2 bay leaves
- assorted toppings
Instructions
Option 1:
In a large pot brown hamburger, onion, garlic, jalapenos, cilantro and bell pepper. When the meat is no longer pink and the vegetables are soft drain and pour into a slow cooker. Add the beer, tomatoes, beans, corn, salt, pepper and bay leaves. Combine well. Cook on high 4 hours.
Option 2:
Follow cooking instructions but keep all the ingredients in a large pot. Bring to a boil, turn down heat and simmer 1 hour.
