White Chocolate Espresso Mousse with Easy Espresso Caramel Drizzle
Impress your party guests with this White Chocolate Espresso Mousse with Easy Espresso Caramel Drizzle. Take that one step further and serve it in individual mini cups. I found mine on the aisle with the holiday baking (separate from the regular baking products) at Walmart. Party City has them too. This mousse is light, airy and full of flavor.
Okay, are you ready for this super hard recipe? Here is goes…….cool whip, pudding and espresso powder! Yep, that’s it. Three ingredients! I also drizzled some Easy Espresso Caramel Sauce over each mousse cup. This mousse would also be perfect for a trifle. Use a frozen pound cake (thawed) cut into chunks and add layers of mousse and fresh strawberries.
White Chocolate Espresso Mousse with Easy Espresso Caramel Drizzle
Ingredients
For the White Chocolate Espresso Mousse:
- 1 (3.5 ounce) Hershey's white chocolate pudding mix, dry
- 1 (8 ounce) tub of cool whip
- 1 teaspoon instant espresso coffee, powder
For the Easy Espresso Caramel Sauce:
- 1 cup light brown sugar, packed
- 1/2 cup half and half
- 4 tablespoons butter
- pinch salt
- 2 teaspoons instant espresso coffee powder
- 1 tablespoon vanilla extract
Instructions
For the White Chocolate Espresso Mousse:
- To a medium bowl add the white chocolate pudding powder, cool whip and espresso powder.
- Stir until all the powders are combined.
NOTE: The mousse might be a little grainy at this point. While in the refrigerator the powders will absorb some of the moisture from the cool whip and the graininess will go away.
- Add to a piping bag and pipe into the mini cups.
For the Easy Espresso Caramel Sauce:
- Mix the brown sugar, half and half, butter and salt and espresso powder in a saucepan over medium-low heat.
- Cook while whisking gently for 5 to 7 minutes, until it gets thicker.
- Add the vanilla and cook another minute to thicken further.
- Turn off the heat, cool slightly and pour the sauce into a jar.
- Let cool some on the counter and drizzle over the pipped mousse.
- Store the remaining caramel and pipped mousse in the refrigerator.
