- 3 1/2 cups cake flour ( I made my own)
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 2 1/4 cups granulated sugar
- 1 teaspoon clear vanilla
- 1 cup buttermilk
- 10 egg whites, room temperature

- 3/4 cup sour cream
- 1 teaspoon orange extract
- zest from one large orange
- drop of orange gel food coloring
For the White Chocolate Frosting
- 1 (8 ounce) cream cheese, softened
- 1 cup white chocolate chips, melted
- 1 cup unsalted butter
- 1 teaspoon vanilla extract
- 6 cups confectioners' sugar
For the Vanilla Candy Shavings
- 1 (16 ounce) package vanilla candy coating
Optional Topping
- orange slices
Instructions
For the Cake:
Spray three 9-inch cake pans with non stick cooking spray, line with parchment paper and spray the paper. Set aside.
Preheat oven to 350°.
In a medium bowl whisk together the flour, baking powder and salt; set aside.
In a large mixing bowl beat together the butter and sugar until light and fluffy. Add vanilla and combine.
Add the flour mixture alternating with the buttermilk until combined. Transfer batter to another large bowl. Clean and dry the mixing bowl. Add egg whites to the bowl, on high whip until stiff peaks form. Gently fold egg whites into cake batter.
Spoon batter into prepared pans (about 2½ cups each). Bake 28 to 30 minutes or until a wooden toothpick inserted into the center comes out clean. Let cool in the pans 10 minutes. Remove cake from pans onto wire cooling racks top side down until completely cool.
Place the bottom cake layer on a cake stand (I first laid it on a piece of round cardboard for cakes but that's optional) Divide Orange Cream Filling in half, spread half of the filling onto the bottom layer, place the middle layer on top ,spread on the remaining filling and place the last cake layer on top. Cover sides and top of cake with White Chocolate Frosting. While the frosting is still soft press vanilla candy shavings all around the sides. Add a pile to the center top and a few optional orange slices.
For the Orange Cream Filling:
In a medium bowl whisk together the pudding mix, whipping cream, sour cream, orange extract, orange zest and food coloring until light and creamy.
How to Melt the White Chocolate:
Pour chocolate chips into a microwave safe bowl. Heat in 30 second increments at 50% power. Stir between each increment. You shouldn't need to heat any longer then 1 minute and 30 seconds. Set aside.
For the White Chocolate Cream Cheese Frosting:
Beat cream cheese and butter until creamy. Beat in melted chocolate and vanilla. Gradually add confectioners' sugar (1 cup at a time). Once all the sugar is incorporated, beat on high until light and fluffy (about 3 minutes). Store frosting in the refrigerator until ready to use.
For the Vanilla Candy Shavings:
Melt vanilla candy according to the package directions. Pour melted candy onto a baking sheet. Let the candy harden ( I did this the night before). Use a straight edge spatula and lightly run it over the surface of the candy. The candy may be too thick for a single run. Better to have thin shavings then thick chunks. Continue running the spatula until all the candy is up. Store shavings in the refrigerator until ready to use.
Notes
If you’re short on time you can make this White Chocolate Orange Cream Filled Cake into a semi homemade version. You won’t get the wonderfully dense cake you would by making it from scratch but sometimes time just won’t allow to make everything from scratch. Keep in mind a cake mix will only make a two layer cake not three.
1 (15.25 ounce) white cake mix
4 large egg whites
1¼ cup buttermilk
1 teaspoon vanilla extract
½ cup oil
OR
Just follow the ingredients on the back of the box
Directions
Mix all ingredients in a large mixing bowl until combined. Follow baking directions on the box.
